3 phase stuff is cheap, but you can get VFDs (variable-frequency drives) nowadays for $100-$200 that will not only run a 3 phase motor off of single phase but will let you adjust its speed way below and a little bit above normal by turning a knob. That's probably overkill for a bench grinder, but it's something to keep in mind if you find an old 3-phase drill press or milling machine for cheap. I have a friend who's an electrician in a big paper mill and he says they use them all over the place and they work great. Even on a bench grinder, though, it would be handy to be able to dial the speed way down when grinding plastic or when using a buffing wheel on it.
