If that thirty year old can was ever opened, it has been absorbing moisture from the air ever since. Water lowers the boiling point of DOT3 since it gets absorbed into all of the fluid. I think that's a good part of why DOT 5 is better for high temperatures -- it doesn't absorb moisture and so its boiling point doesn't decrease over time. Some guys warn against every using a can of DOT 3 that's been opened before and has sat for a while on the shelf. I wouldn't go that far, but I do make sure to put the cap on tight, and if I have a half-used can around, I'll use that for purging, and open a virgin can for the stuff that will stay in the system.
