Whoever set that diff up didn't do much of a job. Now that the wear pattern is set, if you set it back to match it shouldn't be too noisy. If you set it to correct specs you have to expect plenty of metal shavings as it wears back into shape - not a good idea and you will probably break something. Two options - 1 set it back the way it was but with correct preload and clearances. - 2 get a better pinion and match it up to the crown wheel.
Personally I would go with option 1 as there's still plenty of metal there.
