That's weird. It sounds like it truly is overheating, but I don't know why the hose would still be soft. Definitely feel around the radiator and lower hose and see if any spot is cool. Nothing wrong with taking the thermostat out temporarily just for test purposes either. Just don't leave the thermostat out permanently as a "cure". I don't know how the water pump on a 360 is made or if it's possible for the impeller to come off it. It still seems like even if it did you'd have lots of pressure and a hard hose. This is a good puzzle. Let us know what you find.
