Fastenal has good prices and selection on stainless. They have most types in 316 and 18-8, the latter being much cheaper, and good enough for most purposes. They also have SAE stainless nuts and bolts, which tend to be hard to find. I don't know what size the bolts are on M101 trailer side racks and bows, since I don't have any racks for my M101 trailer, but on the M35 bows, the bolts that hold the corners on are 5/16-18 pan head phillips machine screws, which are hard to find. On those bows, the screws go into press-nuts in the sheet metal bows. Most vendors only go up to 1/4" in phillips head. Hex heads have sharp corners that are likely to cut the canvas.

I have not seen stainless "wood nuts", assuming they're what I know as "T nuts". Honestly, for our hobby purposes, unless we live near the ocean, chromated or zinc plated hardware is probably fine. We look at the rusty nuts and bolts on old trucks that have sat out in the weather for 40 years and w want to re-do everything with stainless so that doesn't happen, but given that our restored trucks and trailers are likely to be kept under cover or at least kept painted, and given that most of us will be dead in 40 years, it's probably okay to use non-stainless hardware.
