The rear wheel speed sensor that reads the tone wheel on the differential is the most common part to go bad. It typically starts sending a mucked up signal that doesn't agree with the speed of the two front signals. This in turn causes the ABS to activate when the brakes are applied. You mentioned all you had was an evap. fault code. The scan tool needs to access the ABS module where brake faults are stored not the powertrain controller. The fact that the engine has quit a couple of times makes me lean toward a simple bat+ or ground issue. When the truck is started normally the ABS module/pump goes thru a self test. You wouldn't typically feel anything because the truck isn't moving. But if power was momentarily interrupted while the truck was going down the road then you might fell the ABS going through the self test (thus the shuddering). Just like the classic trucks check all the battery connections, pop apart the red plastic cover on the battery terminal. Check over the power feed that runs from the battery forward to the Power Distribution Center. Try wiggling the harness with the truck in park & the E-brake on to see if the ABS chimes or the engine stalls. Hopefully it will be obvious & easy to spot.
Happy hunting,
Brian
