You seem to understand what needs to be done. A helicoil seems the be the only way to go. Drain the coolant out, as some bolts go through the water jacket. Clean things up well. I am not sure how deep that particular bolt goes into the block. Take a look and then determine if a helicoil can be put in. If so, then put a helicoil in. Make sure to get all the metal shavings out. I would check the head for any warping. If there is none install it or have it planed then install it. Use a new head gasket using a good brand.
