First I would put a mech temp gauge on it and get a real number on temperature. I wouldnt put much faith into the old gauge at this point. The correct sending unit is a must or you wont get a good reading.
If truck is doing the same thing as it did before the new parts I would look elsewhere. Perhaps tuning and timing are off.
