My understanding of the reason for the retorque( and Chris is correct-- it is no longer really required due to gasket materials)is due to the fact that when the engine is warmed up to operating temp, the new gasket will be compressed even more due to the expansion of the components. When it cools off, the bolt torque will be less than originally applied-- thus the reason for the retorque.
