Agree that quarter sawn wood is much more stable in terms of cupping. However, it still will expand and contact along the edges with heat or moisture changes. This is fine if you leave space between the boards. That is exactly what they do with hard wood floors. As you said quarter sawn wood is expensive as it takes longer to set up and cut in the mill and is usually taken from old growth as you said due to the larger trunk size and the higher cost of old growth. Can you see paying extra for quater sawn slash wook that most lumber yards carry. Not on you life.
