Trying to diagnosis a problem like this is difficult. Its very possible that you have electrical issues as David suggest. Since you suggest that rough bumpy travel causes the problem and then after the rough road it goes away, I suspect a fuel issue.

Some large piece of junk in the bottom of the fuel tank may get moving around on rough roads and allow the fuel pickup to get partially blocked. You can rig a temporary fuel source right up front near the fuel pump. If the problem goes away, you know you have a problem in either the fuel line or fuel tank.

Its also possible that you have some large piece of junk in the carb, that gets stirred up and causes a fuel restriction. Another long shot......if the fuel float level was set a little low, rough roads could make the fuel in the fuel bowl slosh around. As it sloshes the float rises to the top of the fuel bowl and temporarily gets stuck shut or almost shut off, then it drops and the problem goes away.

These are all just guesses based on your description.
