You can get Stainless bolts that are stronger than grade 8. They are good for 170,000 psi and used on critical areas like suspension and steering systems. Most all non heated stainless is grade 2 (70,000 psi) ARP and Totally Stainless are 2 places that make them. I normally use just the 300 series stuff(non magnetic) and don't have problems other than blind holes.

If you have a poor quality tap, burrs in the hole, misaligned pieces your setting yourself up. Once you kick a burr and it peels the lubed surface your done.

Personally I've never noticed them backing off anymore than anything else. I do use lockwashers or locktight on most things though.
