I've used 316 on all my front bumper and grille attachments and have used a heap of it in business and on the farm. It doesn't gall as easily as the lower grade stainless and isn't affected by salt water, but experience suggests to use anti-seize anyway. Where possible check the torque specs and use a tension wrench if you're worried about it.
