Be careful about assuming "no water affects it". Water in a DOT 5 system is not so insidious as in a DOT 3 system, because it doesn't get absorbed by the fluid, gradually making it more and more rust-inducing. Instead, the water stays separate from the fluid, settling in the low points of the brake lines. This means that it can rust out the low spot in a brake line even though the fluid you see in the master cylinder looks pristine. I've also heard of it freezing in a solid slug in the low points, thus blocking the brake line.

DOT 3 and DOT 5 are affected differently by water, but the effects are bad in both cases. Best to keep the water out of the system, especially on old rigs where the master cylinder is mounted low and gets all the road crud and water thrown up on it.
