Chris,

I am in the final stages of doing exactly the same thing and thought the same as you that it was going to be a bolt-up with a few mods here and there.
I wanted to keep it looking like a '68 so I kept the hydrolic clutch, this ment that I had to make a template of the mounting holes for the clutch and brake masters, transfer them to a new piece of sheet metal, weld it in place and cut/grind out the '70 fire wall to match.
I also found that the pedal box is different and had to be swapped (BIG pain).
If you don't go that route than you can save yourself those headaches but you will have to swap out the dash corner mounting pieces in order to keep the '68 dash board.
The gas pedal, wiper motor, wiper arm placement(although my '70 cab still had the mounting brackets that they used in '68)are all different and require mods.
Oh, the gas tank will not swap whithout changing mounting hole locations in the cab.
It can be done but it is a little more than a bolt-up.
