The thermostat regulates an ideal operating temperature for engine life and operating perfomance.

Again, the cooling system is designed to keep the engine cool when opearting in warm or hot temperatures but the engine temperature should not exceed 100 degrees above the atmospheric temperature under normal operating conditions. This is applied in warm or hot weather. Cold weather, the thermstat maintains ideal engine temperature. So to say an engine should run 180 degress in all temperatures is not true. Source TM-1808A
