powering Vs re-powering

I just bought a 1962 WM 300 power wagon with a 251 engine. When I bought the truck it was not smoking but, after I fixed two vacume leaks (the carborator was loose and the vacume line from the manifold to the crank case had a major leak that was burnt through on the exhaust), the engine started burning a lot of oil. Also, I changed the oil and refilled with 10-12 quarts of oil (SAE-30). Is there anything that I did wrong? I checked the first two plugs and there is definitely oil burning in the cylinders. There seems to be no antifreeze in the crankcase and no oil in the radiator. In checking the oil in on the dipstick, I maybe seeing bearing material in the oil but, may also be air bubbles. Is there any common problem where a 251 engine will just start blowing a lot of oil out, other than major engine problem? Lastly, should I rebuild or how much extra would it be to do a more modern engine/transmission conversion? Thanks for any help.
