{{What exactly is double clutching and how is it done any info would be appreciated }}

Double clutching is using the clutch two times when you shift gears. When up shifting, you depress the pedal, slide into neutral, let the pedal out with the engine throttled down and then depress it again, slip into gear and speed the engine up.

When you are downshifting, you slide into neutral, let the clutch out and speed the engine up, depress the clutch again and slide into gear.

What you are doing is getting the gear clusters to run at the same speed as the engine and eleminate gear clash. Once you get the hang of it, it doesn't take much longer to shift gears than when not double clutching. Your transmission will also last longer too. Newer transmissions don't need to be double clutched as they have syncronisers that match gear speeds by them selves.
