Meat is browned in big black pot (last one we did was about 30 gal), then rice is cooked in same pot, then seasoning, onions, and a few other ingredients are added and stirred with a paddle till done. Gumbo is cooked in the same pot.

If I ever finish my truck and make it to a rally, I'll have to cook up a batch.

The jambalaya mix sold at the supermarket does not do a homemade jambalaya justice.
