You did get a couple of decent responses, but most of what was suggested is easily bypassed. Ya know how easy it is to get past ANY lock? Can of freon or a "Bump" key. In seconds it's bypassed.

Why would anyone steal a U Haul? For the stuff in back. Mostly junkies lookin for a quick buck. If a pro wants it, kiss it good bye. The junkies look for easy targets. Make it hard, they go elsewhere. They also want stealth unless they're desperate or sick.

Work on the KISS principle. One or two wires unplugged will usually stop em in their tracks. They don't want to spend time with it. Unless your bein followed for what ya got in back specifically, if anyone messes with ya, it'll be a crime of opportunity.

Back in the day, I used to have one of my pups up front with me when I hit tough neighborhoods. That really didn't work as what they wanted was in back of the truck, so I had my critter ride in the box. It was SUCH fun hearing the screams of surprise as the bad guy opened the back only to see a smiling face with BIG teeth. HA!

That bein said, maybe hook up some empty cans with pennys to make noise when the rear door is opened (on the inside), and just put a lock on back. Remember, if someone really wants what ya have, they got it. It all depends on how willin ya are to protect it.
