99% of all vehicle restorations are losing propositions. If you want a PW Diesel that's been built right...you won't likely be able to buy one unless you're willing to A)Do it yourself B)Pay a mechanic capable of such a task.
I think a truck done properly...you might break even.
You'll think this is crazy but I think a fully restored truck with properly engineered modern running gear including a modern diesel would pull close to $40K.
It really depends how it's been done. Lee hit the nail on the head...if you've done everything properly on the truck...that's very different than throwing a bread van 4BT in a 60yr old truck & calling it good.
The engine is just one of the many pieces of the puzzle.
