I have shaved as much as .075 off the head before and always balance and put in much bigger cam. Bringing the compression up and the bigger cam make a HUGE difference in acceleration and torque. these engines at least need bigger cams. Stock cams have no duration (time valves are open) replacing with bigger cam lets in more fuel/air and gets the exhaust out quicker. I think the mods I make give me at least 20 or 30 more horsepower. I dont' know how to equate the results of the changes.
