Your best bet for written information on NV-4500 swaps in general is Advanced Adapters.

Advanced Adapters publishes a booklet titled;
"New Venture 4500/3500 Installation Manual"
This manual covers the Dodge and GM versions of NV-4500 as well as tons of valuable swap info. The cost is cheap, only $10 and it should answer all your questions.
I believe your major hurdle will be in adapting the NV-4500 to the 251. I have never seen adapters for such a marriage. And I cant help you on such a marriage as my experience is with Cummins 4B series engines driving NV-4500's married to NP-205's.
