Running things off one battery when two are in series quickly kills one and also the other, since the battery without the load gets overcharged. If this were a 24/12V situation, i'd recommend a convertor. But no one makes a 12/6V convertor as far as I know (anyone know of one?). As far as gauges: oil is mechanical, ammeter is voltage-independent, fuel and water temp are the only voltage dependent. That can sometimes be worked around with resistors.
Generally, there's a lot of modern 24V accessories from the military, heavy truck, aviation etc. realms; but no body uses 6V any more so there isn't any modern 6V stuff, it's all just to keep old stuff going. So if you are going to mess with a 6V vehicle's electrical system, change it to 12V or even 24V or even 24/12V, but not 12/6V. My opinion.
