I agree do not go too far over. Brake fade or failure will really become an issue.
If you have them turned have them bolted to the hub when you take them in and have them turned while on the hub. They will center on the wheel bearing races which will give a true surfacing to the drum. I did not do this on two drums and they came back out of round as they could not center well on the hub alone.
Most new drums have a max diameter cast into the drum outer surface. Tis is the max legal limit. Back when these drums were made the laws and peoples concerns were a little different. With the higher speeds and consumer rights and the explosion of lawyers things like this are more regulated.
