Sanding Discs/Paint removal

I managed to get the chassis and drive train redone on my '57, mostly due to the help from this forum. I had enough limited mechanic abilities to get me by.

Now I'm starting to work on the cab and body work and know very little about body work. I've repaired the one small rust hole on the cab and now need to sand the paint off of the cab.

The paint is in very good shape, appears to be the factory coat and one coat since, no rust except qa couple small spots on the top of the cab, and the one rust hole from a bullet hole that I've already fixed. Due to the scratches and gouges and cracks in the paint from dent removal, I want to sand all of the paint off and start over.

I have a large industrial side grinder I plan to use for paint removal. I plan to use a small palm type sander with fine grit for actual sanding.

What type of discs should I use to remove the paint? Any advice on anything related to prep, painting, etc. would be much appreciated.
