Put some of the receptacles along the front face of the table. That way, the cords won't get in the way of the work. Put a few along the table top at the rear, where chargers, etc. will be sitting.
I am 6'4" and my benches are all 42" off the floor.
In NY State, the British Common Law prevails: A man's home is his castle. You do not need a licensed, and/or union, or otherwise electrician to do your own work. You will need to have the work inspected, if the building also needs a building permit.
