An old fast rule for the height of anvils is that you should be able to brush their top surface with you knuckles while standing comfortably (another rule for their height is best not recited in a family forum). This is because this height is the most comfortable for continuous use of a hammer. With that said, you probably want your workbench surface to be higher as you most likely will be doing more complex work there than simply hammering. I am 6'-3" tall and my workbenches and sawhorses are 40" tall. I have a big old Columbian bench vice where the tops of the jaws are 9" above the working surface of the workbench. This is great for most tasks, but when I clamp work in the vice and use a hacksaw, I find myself standing on a metal milk crate sometimes. You may want to have one vice mounted where you can just brush the tops of the jaws with your knuckles.
