Unlike installing a countertop, electrical wiring is regulated by the National Electrical Code and enforced by an authority having jurisdiction.
That said... How it's actually wired largely depends on whether your "shop" is classified as a commercial or residential garage.
Also, it may depend on what state the garage is located. (Many states amend the N.E.C.)
A couple of things I am most certain about is that you are not allowed to install receptacles below 18" AFF. It is classified as a hazardous location in a garage.
Furthermore, all receptacles are required to be ground fault protected. (with exceptions.)
There are many considerations that must be taken into account. Wiring a "shop" most always never turns out to be the simple task most folk believe it to be. I always recommend that any electrical work be performed by a electrician, licensed in your state. (Unless if your state doesn't recognize an actual licensure for it's electricians. I think NY state in one of them.)
Many states will allow the property owner to perform their own electrical work, with conditions. The one problem with that is if the property is inspected, as may be required as part of a real estate transaction or insurance policy, the wiring may be found to be non-compliant. In which case it either has to come out, replaced, or placed under condition in writting.
