It can be installed directly, over pywood or sheetrock, or can be purchased already laminated on plywood or sheetrock of different thicknesses. A plywood or sheetrock backing is more durable than just FRP which would be good in a shop. You can get the seam strips, seal them, etc. for a washable surface.

There is also paperless sheetrock now available and being used widely if you are really worried about mold. Molds need a cellulose source (which paper is) to grow. The paperless still has a covering for stability like normal sheetrock but is is a non-cellulose covering.

Hardi-panel, which is a concrete based siding, would be a good choice too. It is very durable.
