I'm no expert, but here's a thought. The truck might steer only one way if when reassmebling the steering gear box the wheel (shaft) wasn't centered. By that I mean if the wheel was all the way to the left or right when the gear was reassembled.

If it's anything like the worm and sector gear on my 1950 PW, here's what to do. Remove the adjusting screw cap and lock and loosen the adjusting screw. You may also have to remove the lower bearing cap, shims and bearing.

Rotate the steering wheel and shaft through its complete rotation, counting the number of free revolutions. Turn the wheel back one half of the number of total turns. The wheel and subsequently the shaft, are now centered relative to their total travel.

Tighten the adjusting screw with the wheel and shaft in this position. The manual tells you the proper torque that can be obtained by adding or removing shims under the lower bearing cap. I know you probably don't have this handy, so just set the adjusting screw and the lower bearing till the shaft doesn't bind anywhere throughout its rotation.
