It all depends on barometric pressure. My typical boiling point of water is 209 degrees. And during a day of boiling Maple the boiling point can wander all over. I have to monitor it all the time, especially if the weather is unsettled. On a nice clear/blue sky boiling day, the BP will stay quite stable.

And keep in mind when boiling water on a 'typical kitchen stove' you can not attain a full boil. The water will appear to be boiling, but with more BTU's the BP on a accurate digital (calibrated thermoeter) will raise, sometimes 1 degree.
