I wish I had a shop 1/2 that size, ,maybe someday.
I highly recomend some type of radiant heat, at least one bay. Along with space heater or central type.
At least future for it, and hook it up later.
Also run conduit under slab for air and electric, and water.
Connect later as time and $$ allows.
