Q1 - Use the snap ring in the case toss the ones on the bearings. Follow the manual procedures for determining proper clearance of the bearing retainers.

Q2 - If the bearing uses neoprene seal, you might get by without the oil retainer, but you will need to use a washer to compensate for not using it. I would pound it out with hammer and blunt end punch as best I could and reuse it.

Q3 - You press/drive it off towards the rear end of the shaft

Q4 - No difference, installs either side of bearing

Q5 - You will have the wrong bell housing and it will not bolt to it. The 251 uses a NP420 transmission and the mounting bolt holes are parallel to each other. The sliding gear transmission mounting ears are angle. Measure the distance between to and bottom holes on both sides of transmission and bell housing, they should not match. You will need to swap out the Np420 bell housing and replace it with the sliding gear bell housing. Hope the engine is not installed yet

Q6 - SAE 140W

On the PW the radiator/bracket uses an extension to accommodate the longer engine. Not sure if you will have to do the same for the carryall – check w/VPW

Also take out the cluster gear and check the bearings. They have a tendency to come apart and since you are this far into it, it makes sense to do it.
