Lots of people are trying to help you and it looks like you have covered a lot of the bases. The comments that question if your temerature sensing system is working correctly are one that you should check.

Here is my 2 cents. This morning while reading a 4 X 4 rag I came across this and immediately thought of you. It is a radiator cap with a built in thermometer. Not badly priced $20. It would give you a direct temperature reading that could be quickly checked when your truck's gauge says you are over heating.
