I tried looking back at what you have done on the truck.
As paul Cook said, is the radiator cap good and the correct poundage?
As Chris asked? how do you know it's overheating? put a gauge right on the engine.
Does this truck have an automatic transmission? what gear are you trying to run it in? It should only have a 3-speed and you may have to run it in 2nd gear.
Do you have an external cooler for the transmission? Is this in conjunction with the engine radiator? Do you have a temperature gauge on the transmission? Have you done any work to the transmision?
I would possibly suspect the trans is building up a tremendous amount of heat..
