I had a 360 that ran hot under load. It turned out to be the water jacket in the block was loaded with a fine sedimate -almost totally plugged. I discovered this by trying to replace one block freeze plug that was rusty and seeping coolant. I drove an old screwdriver into it and pryed it off expecting coolant to come gushing. Nope, it just sort of trickled out. It was packed with a fine mud clay like goo. I scooped out the mud as well as I could and flushed the block with the garden hose. I replaced every freeze plug I could get to. The engine ran fine after that.
