Have you considered comercial vinyl tile? It is about 1/8" thick and very durable they use it in hospitals for the floor and in clean rooms to seal out mosture and dust. It comes in sheets and in 12" square tiles. Not to difficult to install and very durable. I highly recommend it I have seen it used in food production facilities for years. One shop has the same tiles it put down in 90' so that should give you some idea of how long they last.
