The basic paint flattening agents are talc for a slight dulling and diatomaceous earth for a serious flatness. I made rustoleum gloss look pretty much like CARC by adding lots of diatomaceous earth to the paint. You can get it at garden stores. For making new paint look old, though, I think I'd try a surface treatment like a buffing compound where can control the degree of dullness and feather it into the exisiting paint. It would be hard to mix something into the paint that would perfectly match the gloss of the old paint unless you did lots of experimenting.
