What does this house have for support? Are there scissor trusses? are the "planks" spanning from the perlins to the ridge pole?

If you have the support, use TJI's or the like (2x4's, 2x6's, 2x12's) to create a insulating space, sheet it with osb and metal roofing. You should consider weather or not yoou want a "hot roof" or not. Where I live "Hot roof's" don't work well, ice builds up and the roof rots out in about 10 years. Good friends of mine own and run the local truss plant and about 50% of their work comes from "hot roofs" gone bad.
