2005 dodge cummins auto vs std, and 3.73 vs 4.10

I'm trying to take advantage of the good deals on dodge trucks and my problem is - I can't decide which of the above is best. I'm thinking for off-road oversize tires I would be better off with 4.10 gears vs 3.73 ( I also live in denver so I will be towing in the mountains). I'm old school in that I like standard transmissions vs automatics for trucks, but I've heard the 48RE automatic transmission is very durable. Any feedback from you guys with late model dodges would be appreciated. One last question, what is the difference between the 3/4 ton and the 1 ton (I'm looking for structural differences as to why the 1 ton can haul and tow more than the 3/4 ton). (2500 vs 3500)
