Using collector car insurance is false economy if you intend to use your truck for something other than a parade twice each year. You get what you pay for and you can't have it both ways.
True, they may not know if you use your truck off road, but the big problem is liability if you wreck going to/from the trailhead (or any other driving excluded by the policy) as they may decline coverage, in which case you not only have personal exposure for the injured parties' damages, but face charges for driving without insurance.
