You need a Single Pole, Double Throw (SPDT) switch for your application. The key is to purchase one without the center off position. Check out this educational electronics website from the UK. I would want a Double Pole, Double Throw (DPDT) switch so I could control the tank valving or fuel pumps for each tank depending on how they are plumbed.
