{{Was told by one person that after bolting the new exhaust manifold to the intake, I needed to get the surface that faces the block machined so that it would fit without leaks. Is this true, or would I be giving a machine shop money that I could keep in my pocket?}}

Put a really good straight edge along the manifold you're putting on. If there is any doubt, I'd go ahead and have it milled a tad. No more than .010 should do it. Also, see if you can score a good thick aluminized gasket. These will seal due to the thickness allowing some distortion allowance. This is especially critical since you've already burned one gasket out already.
