exhaust manifold questions

Am replacing the exhaust manifold on my M-37 due to a few cracks. Was told by one person that after bolting the new exhaust manifold to the intake, I needed to get the surface that faces the block machined so that it would fit without leaks. Is this true, or would I be giving a machine shop money that I could keep in my pocket? (Until this mention, I thought that was why there was a gasket between the manifolds and the block.) Also, when disassembling everything today, I noticed that all that was left of the gasket between the manifolds was the metal center- the paper or cork or whatever the other material in the gasket is, was no more. The engine has about 250 miles on it since it was overhauled, and the gasket was replaced then. What is wrong? Or should I throw a new gasket in and not worry about it. Thanks for any help.
