The teeth that get 'overset' will wear fastest, so blade will 'break in'. I have used both of the hammer-set methods, once a 2 man crosscut saw, once on a 12in rip blade, both to good effect. Dadoe chippers are usually set by upsetting, but you can 'joint' the O.D. by 'sawing' a wetstone to match them- I wouldn't reccommend that on a 30 inch blade. I think saw mills are covered in the Foxfire books- don't you have a set? A guy with your interests would love those, also "Practical Blacksmithing" a compendium form the 1890's.
