I received the following information from Bob Stahl, Veteran Vehicles, when he changed the differentials on my Carryall to 4.89's. The carrier on my Carryall did not have the 1/16" spacer nor the welded tag, so I used 3 gaskets. I also have a centered carrier that will go on the Bumblebee some day. That one also is unmodified and requires 3 gaskets.

From Bob Stahl, Veteran Vehicles TM 9-1808C, C1- 6.1
Ordnance Maintenance, Power Trains and Interchanges
Military/ Civilian Trucks 1941 to 1971 (Dodge)

"The following concept is very important. The axle centerline of the 9-5/8 third member is 1/16 further away from the mounting surface than is the centerline of the 8-3/4 unit to allow for the larger ring gear. Each axle housing after vehicle S/N 82037271 was modified by placing a 1/16 thick ring over the studs and welding it on to space the third member 1/16 out. These housings use only one gasket and have a tag welded on that says "use one differential carrier gasket" (see figure 6-1). On all unmodified housings with a 9-5/8 third member, three gaskets must be used to provide proper spacing.
If a truck exhibits a rear axle breaking off near the outer end, the reason may be that a 9-58 third member is mounted in an unmodified housing with only one gasket, serverly stressing the axle shaft by pushing it 1/16 off axis. This is the reason for note c(1) about three gaskets on page 285 of TM 9-808, January, 1944 (3/4-ton WC series trucks). The same condition can also occur by installing an unmodified 8-3/4 thrid member in a 9-5/8 housing, thus stressing the axle shaft by pulling it 1/16 off axis (see paragraphs 5.3 (b) and (c)."
