I had the very same problem when I did my brakes last year. Even had the same fluid squirt from the hole in the cap. Gordon Maney coached me on the proper adjustment of the shoes and it cured the problem. The further the wheel cylinders have to travel, the more fluid it takes to push them. thats why you need to pump so many times. Try adjusting the shoes tight on the drums so the wheel cylinders do not have to travel and see what that does to the pedal. (then back them off a bit, as per the manual)
