Fine threads are shallower, therefore leaving a thicker body to the bolt, therefor stronger. But, a chain is only as strong as it's weakest link, a stud will be as strong as the thinner body of the coarser end. The real advantage of studs is twofold: 1)the coarse end is usually an interference fit- tight and waterproof. 2) Since the fine end will not be exposed to the water you will get a rust free nut/stud interface, thus allowing for a more precise torque. This rust-free-ness allows finer threads that would rust away quickly if exposed to water. And the limiting factor on torque is the head design, the same head w or w/o studs would have the same torque limits. Since torque is a measure of friction under the load of the tension of the body, the same torque equals the same tension no matter the thread pitch. So, whatever your reasoning,stud your heads for a more uniform torque, and torque to the same specs- 65 ftlb (from memory?...but my memory is failing- I now REALLY believe that I slept with all those girls I lied about in High School!)
