my two cents worth:

if you are real serious, there are plastic bags sold for storage of classic cars. i don't have the manufacturers handy, but can get them for you if interested.
they are expensive.

i have talked to guys that have sprayed oil all over the undercarrage for storage, seems to work. the military uses cosmoline and you can get it from easwood.
my experience is that if the building you store your truck has air circulation (forced or natural), that works the best. i agree that a vapor barrier under the
truck would help. taking the weight off of the suspension and tires will help.
i would suggest replacing all fluids after you park the vehicle (combustion acids in oil, water in brake fluid, condensation in differentials, etc). i don't
know if oil in the cylinders will last 3 years, but it has worked well over the one winter (5 months) for me. there are spark plug replacements that create a
rust preventive atmosphere in the combustion chamber. i've always used sta-bil in the gastank to stabilize the gas, but never for 3 years.

plug intake and exhaust to keep critters out. i made a simple metal plate that fit between carb and manifold to block intake and stuffed a rubber ball up the
tailpipe; steel wool sounds interesting, i'll have to try that.

i've always had good luck with moth balls to keep critters out of the cab. i don't know if they will last for three years. and be forwarned, your cab will
smell of moth balls for a while.
